Recipe: Strawberry and Mango Salad

After testing this recipe out a few times and LOVING IT, we even allowed my in-laws to give it a try…it should go without saying but they were rather impressed as well. This salad is DELICIOUS and you must give it a try!

Strawberry and Mango Salad with Cinnamon Vinaigrette

makes 2 servings

Ingredients (for salad)

  • 1 cup fresh strawberries, sliced
  • 1/4 cup almonds, sliced
  • Mixed greens
  • Mango, sliced
  • 1/2 cup dried cranberries (if you’d like, it’s not necessary though…it’s just GOOD!)

Ingredients (for dressing)

  • 1 teaspoon Dijon mustard
  • 3 Tablespoons aplle cider vinegar
  • 3 Tablespoons lemon juice
  • 1/3 cup maple syrup (pure maple syrup preferably)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 1/4 cup canola oil

Unfortunately there aren’t a lot of pictures to go along with this recipe since it’s pretty easy to throw together.

As you might guess, combine all of the ingredients for the dressing and stir well.

Combine all of the ingredients for the salad and top with the dressing.
