makes 4 servings

1. Preheat over to 325 degrees F.
2. In a small sauce pan, heat the soup, milk, and green chile on low-medium heat. Do not bring it to a boil.
3. In a skillet, brown the beef or turkey and while cooking add garlic salt.
4. Grab a 9×11 glass dish and put it on the counter.
5. Once the meat has browned, scoop about 1/8 of the beef/turkey into a tortilla. Sprinkle on a little cheese then roll the tortilla and place it seam-side down in the glass dish. Do this for all of the tortillas.
6. Pour warm soup and green chile mixture over top of the tortillas then top with a little extra cheese for good measure. Use a spoon and make sure you pour soup over the corner of each tortilla so that they don’t burn while in the oven.

7. Bake the green chile enchiladas for 20 minutes at 325 degrees F.

This enchiladas recipe is one of the easiest to make and it’s a great change from the traditional recipes you’ll find. Serve up the green chile enchiladas with a side of corn or rice and enjoy!

Man, this looks good! I’m a huge fan of enchiladas, but have never attempted making them at home before. Thanks for sharing this recipe!
This definitely looks tasty indeed! Thanks for sharing the recipe!
This is a dangerous recipe to look at when I’m hungry!
I am so hungry right now Andy…
What’s up with that mate, I didn’t get an invite ha! I would have certainly had you over for my pulled pork last week. This looks awesome and certainly super easy! I honestly never realized how many people use canned soup in making meals until my fans told me what they cook. I’ve never had an enchilada before but I think I might have to try them now.
It’s hard to believe that I had never even heard of green chiles until 3 years ago. Now they are one of my favorite foods.
Looks delicious! I make tacos but rarely think about enchiladas, it is hard to find tortillas but like Thad said we could try with corn.
I’ve been wanting to make a recipe like this. Will have to use yours!
You can also use corn tortillas (assuming you have them where you live!), and they are equally as good.
I probably need to look into this more, but my issue with corn tortillas is that don’t hold together well!
Corn tortillas will provide a more authentic taste, but I’ve never been particularly fond of them myself.
My wife makes some killer chicken enchiladas. This looks good as always Andy!
I love traditional chicken enchiladas, but what makes this one of my favorites is that the green chilies and mushroom sauce are amazing together! It’s certainly different than traditional enchiladas, but just as good (if not better).
