Recipe: Greek Quinoa Salad

Greek Quinoa Salad

makes 4 servings


  • 1 cup dry quinoa
  • 2 cups water
  • 2 cups sliced grape tomatoes
  • 1 cucumber, peeled and chopped
  • 1/2 cup sliced kalamata olives
  • 3/4 cup feta cheese
  • 1 1/2 Tablespoon olive oil
  • 2 Tablespoons lemon juice
  • 1 teaspoon dry oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Ingredients Greek Quinoa Salad

Combine water and quinoa in a medium pot and bring to a boil. Reduce heat to simmer and let cook for 15 minutes (or until quinoa absorbs all of the water).

In a large bowl combine the sliced tomatoes, kalamata olives, and cucumber.

Add cooked quinoa, olive oil, lemon juice, and feta cheese.

Greek Quinoa Salad

Serve it up immediately or keep in the refrigerator until ready to serve.

Editor’s note: I will say this was the 2nd best quinoa recipe that we’ve tried, however, it doesn’t quite compare to the delicious Southwest Quinoa Salad Recipe we had a few weeks ago.

  8. Oh wow.. this looks tempting. I must try this soon! Always looking for new recipes (healthy ones). I made a homemade chipotle bowl last night, and I felt so good afterwards instead of the icky sluggish feeling I get when I eat real Chipotle.

  9. My mom made a really good quinoa salad with salmon, mayo, onions and lemon juice, kinda like a tuna salad and it was delicious. I have had a box of quinoa sitting in the pantry for over a year now, I really want to try this recipe!

    Funny I was just talking to my mom about quinoa last night. I’m going to have to make a point of picking some up next time I’m at the grocery store. It sounds like a pretty versatile food, but I tend to get in my habits of making the same meals all the time. It would be great to expand my cooking repertoire though.
