Easy Potato Soup

makes 4 servings


  • (2) Potatoes, peeled and cubed
  • 1 cup onion, chopped
  • 1 cup celery, sliced
  • 3/4 cup carrots, sliced
  • 3 Tablespoons butter, cut in little chunks
  • 1 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 14 ounces, chicken broth
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 1 1/2 cups 2% milk
  • Bacon bits and shredded cheese, for topping (optional)

Place nearly everything (potato, onion, celery, carrots, butter, salt, ground pepper, vegetable broth, and garlic) in a slow cooker.

Cover slow cooker and cook on low for 6-7 hours. After cooking for this time, increase heat to HIGH.

Measure out your flour and put it into a mixing bowl. Slowly add the milk to the flour, whisking continuously until well blended. Once mixed, stir flour/milk mixture into easy potato soup.

Cook uncovered for an additional 25 minutes or until thick (stir frequently).

Ladle easy potato soup into bowls and top with bacon bits, shredded cheese, and anything else you’d like. Serve it with a side of sourdough bread and enjoy!

    Do you think it would freeze well? I am looking for a potato recipe to freeze as my potatoes are about to go bad, and I don’t like how watery cooked potatoes taste when they thaw. Maybe soup is the option?

      Hmmm…great question Pauline. I’d give it a shot at least once and test it out. The great thing about this recipe is that’s it’s pretty cheap, so if it didn’t work it’s not like you just dropped $15 or something.

  6. That looks good Andy! I’ve never made soup in a slow cooker before and I like the bacon bits on top idea!! Everything tastes better with bacon.. oh and cheese apparently (advert in Canada) I make a potato and leek soup on the stove top and I’m sure at some point it will land on the blog.   7. I have potato soup for dinner every Christmas Eve. It’s one of our family traditions. However, our potato soup uses a bechamel sauce and the carrot and bacon is incorporated into the soup.

  8. We helped host a ‘progressive dinner’ in our neighborhood. Used this recipe (larger amounts of ingredients, of course) to feed over 100 people. They loved it.
