At the WSL house, we’re big fans of baked salmon. As many long-time readers know, we’re also a big fan of an easy recipe (such as the easy potato soup recipe we introduced last week).
While I’ve only had one other salmon recipe at WSL, the Garlic Basil Baked Salmon, I will say that this is our favorite salmon recipe. We make these at least every couple of months and it’s absolutely delicious!
Please note: I realize we used 1 salmon fillet for our pictures, but the above ingredients are enough for (4) 6-ounce fillets.

Combine pineapple juice, lemon juice, and salmon fillets in a zip-lock bag. Seal and marinate in refrigerator for 1 hour.
Preheat over to 400 degrees F before proceeding. Also, coat an 8×8 dish with cooking spray.
Remove the salmon from the zip-lock bag, place the fillets in the dish, and discard the marinade.
In a small bowl, combine brown sugar, chili powder, cumin, salt, and cinnamon. I use a small fork to whisk it together and ensure it’s thoroughly blended.

After creating the rub, spread it over the fish. Use a spoon to spread the rub evenly and even press it down into the salmon lightly.

Bake salmon for 12-18 minutes (depending on thickness of salmon) or until fish flakes easily.
Serve the easy baked salmon recipe with a few veggies and enjoy!

I love the colour on the fish! Usually when I make salmon, it’s just a simple lemon pepper butter sauce. I’m looking forward to salmon season in Vancouver next year!

Andy, you’ll be happy to know that salmon is especially good for your eyes. The omega acids are great for tear film and for your macula! I tell my dry eye patients to eat more salmon.

We enjoy fish in our house but not big fans of salmon. I do however like how you introduced the sweetness with the pineapple juice and the brown sugar. I’ve often used a mix for BBQ meat to marinade. It’s absolutely amazing so I’m betting these flavours on the fish will be perfect. Mr.CBB
Looks good! In order to cut down on our grocery bill we’re looking to stock up on Salmon but freeze the fillets we don’t use.
We used to buy a lot of the frozen fillets but for this recipe we opted for the fresh salmon. They’re expensive…but really good!
Oh man, I miss salmon so much. But my wife is allergic to fish, so I only rarely have it any more.
My wife and I were just talking about allergies that it would suck to have (she does lab testing for allergies) and having one for fish would certainly suck! I eat a lot of fish. lol.
